Sandwiches are not usually in our vocabulary here except for school lunches, but I haven’t organized myself enough to eliminate them altogether … they’re just too easy and convenient! So, going way back to when the kids were toddlers we use to get these great “nutty girl” sandwiches at a local coffee shop and they were sooo good. It’s been a favorite ever since! Cashew butter recipe + assembly instructions below.
cashew butter + shredded carrots + green apples + cheddar cheese + really good bread!
I love to buy fresh, homemade bread and when I’m in Brookside I always try to stop into Heirloom. They had a yummy sunflower flax bread that I picked up for this sandwich. A couple of other local places that I love buying sourdough bread from are IBIS bakery and Fervere. Since I limit our bread, I like to indulge in really good, preferably sourdough, breads with minimal ingredients.
A few weeks ago I mentioned that I was so excited to stop by Golden + Pine, a new artisan home goods and garden store that opened in the up and coming East Brookside neighborhood, just around the corner from our previous home. Well, I finally had a chance to pop in and it was a a unique feast for the eyes right down to the fantastic safety pins and Golden and Pine tags. It’s so refreshing to have a home store here that has carefully picked artisan products for the home and many of them are from local makers. It was so inspiring to walk around and read the stories of the artisans. Stephanie, the owner, has placed story cards about each of the makers by the products that personalize each piece. I came home with a perfect ceramic bowl from Terrafirma and a great new linen to add to my collection. She will also be hosting occasional workshops with artisans that I’m really excited about. You can read more about Golden and Pine here from this great blog post by Shanley of Eat It, Kansas City.
